Would you believe me if I told you we were staying by a active volcano named Cotopaxi? Well guess what we are. We are staying at Hacienda Porvenir right next to the active volcano Cotopaxi. Cotopaxi is currently shooting out bits of ash. At first I was scared that it would erupt but then I realized the crater that is shooting out bits of ash is facing the other way.

The day before we went horseback riding we made Empanadas. Here is the recipe!
Dough (Masa):
3 cups of flour (3 tapas de harina para todo uso)
1/4 teaspoon of salt (1/4 cucharadita de sal)
1/2 cups of sugar (1/2 taza de azúcar)
4 oz of butter (4 oz de mantequilla)
1/2-2/3 cups of milk (1/2-2/3 taza de leche)
Preparation :
Mix the flour, salt, and sugar in a bowl with the butter. You can mix with your hands until all of the ingredients are well mixed and form a ball of dough. Make a hole in the ball of dough and pour in the milk. Mix until the milk is part of the dough. Cover with clean cloth and let sit for one hour.
After the hour, pull 2 tablespoons of dough from the large dough ball and roll into a smaller dough. Then use your fingers to pinch that small dough ball into a flat circle. It should be very thin! Add a small cube of cheese to the inside of the flat circle and fold the circle in half. Then fold and seal the edges of the dough together like these ones Lulu and I made:
Then fry the Empanadas in a pan full of oil and use a spoon to flip them once one side is brown. Put them on paper towels to let them cool down! Then eat them. YUMMY!!!!

Ecuador is number six on the list of countries with the most volcanoes. It has 84 volcanoes! The US is first because we have Alaska and Hawaii. We have 164 volcanoes!
Hacienda Porvenir is trying to plant ONE MILLION trees for reforestation. They already have planted 700,000 trees!!!! That's a A LOT of trees! It would be hard for me to plant that many trees!
